A Raw Mocca Mousse

Are you a coffee lover? Good, cuz you're invited to a crazy raw tea party *on my bed* where the magic happens. Especially today as Im having a photo shoot on my bed (the room's got two windows and a mirror so the light is perfect).




I love making mousses as you can pop what ever you fancy in them. Ah well almost anything. This time I flavored my mousse with coffee AND chlorella! Then I piped it out in small coffee cups to be enjoyed well chilled. The mousse is quite heavy so you feel cute and sweet after only 4 to 5 spoons, which makes it the perfect after dinner dessert. This recipe serves about four small cups.

I picture an old, odd lady living with 20 cats in a cabin somewhere where the mailman don't visit, that she feeds the bears and wolves around her house with leftovers and that she has a raven living on her porch. Anyhow, this lady would come up with a recipe like this one, trying to seduce any passtravelers. Only that the lady happens to be me. Minus the cats, raven, bears, wolves, the cabin and so but... yeah and Im not an old lady.. But the archetype of that old lady lives inside of me and I do try to seduce you with this mousse. Are you with me? Good. Let's dive into it! 

If you don't want 7 tablespoons of nasty, decadent, strong, black coffee in your mousse, then try adding some Maca instead. But hey, if you want to enjoy some coffee, do it stylishy sinful! 




Crazy Tea Party Mocca Mousse, swedish

• 2 dl Dadlar
• 2.5 dl Cocosmjölk (2.5 dl Vatten + 1 dl Cocos, kör i blender och pressa ut mjölken genom en "nötmjölkspåse")
• 2 små nypor rosa Himalayasalt
• 1 krm äkta Vanilj
• 2.5 msk raw Kakao
• 1 msk Lucuma
• 2 msk Avocado
• 7 msk starkt, svart Kaffe
• 5 msk virgin Cocosolja
• 0.5 tsk Chlorella

Kärna ur och blötlägg Dadlarna. Gör Cocosmjölken och brygg kaffet. Överför Dadlar och Cocosmjölk till en blender och mixa tills slätt. Tillsätt nu resten av ingredienserna utom Cocosoljan och mixa tills helt slät. Tillsätt då Cocosoljan och mixa 15 sek. Lägg moussen i kylen över natten, eller för att den ska stelna snabbare, i frysen. Du kan hälla ner moussen i en plastpåse och när den har stelnat och blivit krämigare klipper du av ett litet hörn av påsen och klämmer i det i en skål / tekopp. Toppa med bär.

Easy To Make Raw Truffles (The Lazy Version)


Hiya!

Here comes a simple, fruit-lover-friendly little snack, coated in the super food (or fruit powder) of your choice and dipped in raw, white chocolate. Mmmm... :) This is a super-easy recipe that everyone can make and enjoy, sort of like the lazy version of a truffle. Bananas already have that sweet and creamy texture that is perfect for so many things. 

Tips #1: The white chocolate turns darker if you add real vanilla powder, dark agave and coat the bananas in cacao or carob. If you want it white, choose only light colored ingredients, like vanilla essence, lucuma, light agave or honey! 

Tips #2: You can sprinkle the chocolate dipped bananas with chopped nuts (pecans are always nice), cacao nibs, shredded coconuts, chia seeds, hemp seeds or whatever you fancy. Only make sure to apply the nuts/seeds when the chocolate is still wet, otherwise it won't stick. 

Tips #3: When dipping the bananas in the melted chocolate, make sure the chocolate have had some time to cool off. Newly melted chocolate will leave a thin layer after dipping. If you wait a couple of minutes it will thicken quicker. 




The Lazy Lady's Raw Truffles (nut free)
(Swedish further down)

• 2 organic Bananas

Coating


2-3 tablespoons of raw Cacao, Lucuma, Mesquite, Maca etc
• 0.5 teaspoon Cardamom


Melted White Chocolate


130 g or 1 cup chopped Cacao butter.
• 2 tablespoons light / clear Agave or Honey
• A small, small pinch of pink Himalayan salt
• 0.5 teaspoon real Vanilla or vanilla essence

Melt the Cacao butter in a water bath or in your dehydrator. Add Agave, Salt and Vanilla. Stir and put in the fridge to thicken. Don't wait too long as it will get hard quite fast in the fridge. Make sure to stir it while it's getting colder.

Cut the bananas in pieces and dip them in the coating. When your melted chocolate has thickened a bit it's time to dip the bananas. If you have a grid to put them on, it's great. Otherwise you can let them rest on a silicone sheet. Dip them 2-3 times and make sure to turn them so they don't stick to the grid/sheet.

Lata Damens Raw Tryfflar (nötfria)

• 2 ekologiska Bananer

Panering


2-3 msk raw Kakao, Lúcuma, Mesquite, Maca etc
• 0.5 tsk Kardemumma pulver


Smält Vit Choklad


130 g eller 2 dl finhackad Kakaosmör. Blir ca 1.5 dl som smält.
• 2 msk Agave nektar, Yacon sirap eller honung
• En liten, liten nypa Himalayasalt
• 0.5 tsk äkta Vaniljpulver eller vanilj essens

Smält Kakaosmöret i ett vattenbad eller torkugnen. Tillsätt Agaven, Salt och Vanil. Rör om och ställ i kylen för att tjockna. Låt den inte stå där för länge eftersom den kommer tjockna ganska fort. Rör om då och då.

Skär upp bananerna och doppa dem i paneringen. Doppa dem sen i den smälta chokladen. Låt dem rinna av på ett galler eller silicon underlägg alt. smörpapper. Doppa dem 2-3 ggr och vrid bananbitarna undertiden de torkar så att de inte fastnar på underlaget.

Super Breakfast for a Superman.


Jakob's been crunching for weeks working on several deadlines at the same time being the most lovely partner anyone could imagine, doing his best, full with gratitude, humbleness and appreciation. So this morning I treated him with a super food breakfast. As always he's like a little child on christmas morning every time I make something raw so it's really fun to surprise him! *love you baby*

I took some of the raw pastry left overs (from the danish pastry post) and drizzled raw maca chocolate on top, made flax crackers, a chocolate spread to go with them and poured some coconut water that we love to drink every day. The smoothie is for me though.

I make these hard core super food smoothies that I don't think anyone else likes but me... In them I have banana, camu camu (for the incredible amount of vitamin C that is needed for a healthy nervous system, the brain and a thousand other things), carob (for the calcium and magnesium), hemp oil (for the perfect balance of Omega fatty acids), acaí berry powder (for the antioxidants), mesquite (for the fibre, 15% protein, taste and minerals) and barley grass powder (for the chlorophyll, iron and being a DNA healer,  and balance it gives me).






Five Benefits of Coconut water:

• It's packed with electrolytes.

Electrolytes are electrically charged ions that play a vital role in maintaining proper functionality of your nerves, heart, and other muscles. Also each time you sweat, you lose important electrolytes, especially potassium and sodium. In order to repair your body, you need to fill up your electrolyte levels.

The electrolytes takes care of and balances the fluids in the cell. If the amount of electrolytes and the water of the cell reduce, the body gets dehydrated.

The essential electrolytes are: Potassium, sodium, chloride, magnesium, calcium, phosphate, bicarbonate, sulfate, magnesium and phosphorus.

• It's got plenty of essential vitamins.


Vitamin C, Vitamin B6
, (which helps your body build protein by producing amino acids. B6 also helps produce neurotransmitters to regulate your mood, and it helps metabolize food to increase energy.) B1, Thiamin, which maintains your nervous and circulatory systems, and B2, Riboflavin, which promotes energy metabolism. 
B9, or Folate (helps your body produce and maintain new cells. Folate is also important for brain health and development).

• Coconut water is all natural, so you don't have to worry about adding wierd addatives, toxins or preservatives into your body.

• Coconut water calms upset stomachs and reduces vomiting.
 It has lots of dietary fiber which aid and ease digestion. Fibre also helps to remove toxins from the intestines.

• It promotes weight-loss and high energy. 


It's the B vitamins plus other essential nutrients in the coconut water that boost your metabolism and promoting energy, which in turn helps in weight-loss.






The flax crackers are really easy to whip together (if you have a dehydrator oven that is). You can put all sorts of seeds and nuts in it, but be careful with adding agave nectar or honey as the crackers then won't be crispy.

Super food Crackers

• 1 cup Flax seeds (2 dl)
• 0.5 cup Chia seeds (1 dl)
• 0.5 cup Pumpkin seeds (1 dl)
• 1 tablespoon Acaí berry powder 
• 2 tablespoons Blueberry powder
• 2 tablespoons Mesquite or Lucuma powder
• 2 1/4 cup Water (4.5 dl)

Put all the ingredients in a large bowl and let it swell for a couple of hours, or over night. Then spread the mixture very thin on a teflex sheet and dehydrate until crisp (about 8 hours).

Tips: Mix both regular brown flax seeds with golden flax seeds to get a beautiful color.


Chocolate & Lúcuma Spread

• 2 tablespoons Tahini or Nut butter
• 1 tablespoon Agave nectar
• 1 tablespoon Cacao powder or Carob
• 1 tablespoon Lúcuma powder

Stir the ingredients by hand and enjoy on a flax cracker!

[What is lúcuma?]

Lúcuma (Lu-ku-ma) is a fruit powder that gives not only a unique flavor to your raw sweets, it also gives a wonderful texture to smoothies, fillings, spreads and not to mention raw ice creams! Lucuma is a subtropical fruit from the dry subtropical Andean coastal valleys of Peru. The trees grow at 1000-2400 meters above sea level. The fruit is very nutritious, having high levels of carotene, vitamin B3, carbohydrates, fibre, vitamins and minerals (such as iron etc). In some countries it is one of the most popular ice-cream flavors.

A 3 Ingredient Raw Fudge




Raw fudge is great for many different occasions:

• To satisfy the sweet tooth of a child (muuuch better than any commercial candy),
• you can take one after lunch / dinner to kick start your digestion,
• surprise and treat your partner with it, 
• let it be an exotic snack for your guests when hosting your next party, (raw food is an excellent conversation starter you see, everybody's got an opinion about raw food),
•...Or simply pop them in a cute bowl to keep by your computer, as I do :)

I hope you are enjoying summer to the fullest right now. I would, but the weather here have been everything but summer like. The intense raining in Sweden during june have beaten the old record from 1901(!!) Now let's get down to business shall we? It's Fudge Time!

The great thing about raw fudge is that you use the same basic technique to create them (using dried fruit and nuts), but the outcome can taste in a million different ways depending on what super foods you add, what nuts / seeds you choose, refrigerated or kept in room temperature or even the shape of them. Another great thing is that this is one of the ultimate raw beginner sweets that you don't have to have any experience to succeed with. Want it nut free? No problem, only substitute the nuts with pumpkin seeds or even shredded coconut.

I made quite a small batter as I tend to eat a little too much when it's available *can't get enough*, but if you want you can double the recipe!

The 3 Ingredient Raw Fudge

• 1 cup Dates
• 1 1/4 cup Pecans, Walnuts, Almonds or Pumpkin seeds
• 1 cup of Lucuma 

Pit and soak the Dates 5-10 min. Grind the Nuts or Seeds into a flour using your blender or food processor, put aside in a bowl. Make a date paste by simply process the Dates in a food processor and process until you have a paste (work with a spatula). THEN you add the Nut / Seed flour and Lucuma! Process some more and voliá! Your done.

Put some plastic wrapping in a plastic container and press down the fudge dough. Even the surface
with a wet spoon. Put into the freezer for 20 min, and then cut squares of them.

Tips: For a more "fudgy" taste, use pecans. Love coconut? Use shredded coconut instead of nuts or seeds and enhance the coconut flavor with 2 tablespoons melted virgin coconut oil in the batter (as I did in the photo below). Not so much into super-sweet fudge? Create a more neutral flavor by using half a cup lucuma and half a cup purple corn. Purple corn works great as a neutralizing "filler".

Enkel Raw Fudge på 3 Ingredienser

• 2  dl Dadlar
• 2.5 dl Pecannötter, Valnötter, Mandlar eller Pumpakärnor
• 2 dl Lucuma 


Kärna ur och blötlägg Dadlarna. Gör ett mjöl av Nötter eller Frön i en blender eller matberedre, häll i skål och ställ åt sidan. Gör en "dadelpasta" genom att helt enkelt köra dadlarna i en matberedare tills de blivit till pasta. Hjäp till med en slickepott. Nu kan du tillsätta Lucuman och Nötterna / Fröerna till matberedaren och processa lite mer tills du har en deg.

Klä en fyrkantig plastburk med plastfolie och pressa ner degen. Använd en blöt sked för att jämna till ytan. Ställ i frysen 20 min, skär upp i kuber och servera!


Tips: För en mer "fudgig" smak, använd Pecannötter! Älskar du Cocos? Använd riven Cocos istället för nötter / frön och förhöj cocossmaken med 2 msk smält virgin Cocosolja i degen (som jag gjorde i fotot nedan). Inte så inne på super-söta godsaker? Skapa en mer neutral smak genom att använda 1 dl Lucuma och 1 dl Purple corn. Purple corn fungerar utmärkt som en neutraliserande utfyllnad i söta recept.

No-stress Tahini bites! (nut free)

Hello fellow sisters and brothers! <3

Yesterday I made Anti-stress-chocolates! Did you know that the aroma of chocolate soothes nervous, tense and anxious people? I could sure use some of the beneficial goodness from super foods now (doing my book keeping among other stuff). So I went into the kitchen and came up with these!



They are loaded with ingredients that makes you relaxed and soothes the nerves:

• Cacao: Lowers the blood pressure, reduces stress hormone levels in highly stressed people and helps people with anxiety to improve their metabolism and improve gut microflora, while reducing stress. Raw cacao powder contains PEA, which is known as "the molecule of joy"and makes us present, positive and focussed. Another interesting plant chemical found in raw cacao is anandamide, that releases serotonin which makes us blissful. If that wasn't enough, raw cacao also contains an amino acid that makes you euforic. In other words, raw cacao is a perfect defense against stress! 

• Ashwagandha: This is an adaptogenic ayurvedic super herb great for all stress related issues. It calms the mind, it gives relieve when you are nervous, soothes the body, gives energy and strenghten the nervous system. It boosts the immune system and fights off free radicals, thanks to antioxidants in the herb. It has been used for nervous exhaustion and is considered the primary ayurvedic herb for its ability to build reserves for handling stressful conditions and support sound sleep. 

• Tahini: Tahini is rich in many different vitamins and minerals, but it is particularly full of different B vitamins. In specific, the B vitamins found in tahini include B2, B1, B15, B3 and B5. Each of these vitamins is an important part of the B complex of vitamins. The B complex is necessary for a variety of important bodily functions and processes. When you stress, you lose a lot of vitamin B, which is ever so important for the nervous system. A strong nervous system can resist stressful situations.

• Mesquite: Regulates your blood sugar levels to keep your mood bright and shiny! ..And fights off hunger, which is great when you don't have time to eat.

When you take a bite into these chocolates, they are soft and melts in your mouth, not like fudge, more like a soft chocolate if you know what I mean? :) You simply have to try them out! If you like the adult taste of blood orange zest (like I do), add more than the recipe calls for, until you get it as bitter as you want it.



No-Stress Tahini bites, makes three big bites.

• 100 g, 1 cup finely chopped Cacao butter
• 2 tablespoons raw Kakao powder
• 1 tablespoon Mesquite
• 1.5 teaspoon Ashwagandha (optional)
• 2 tablespoons dark Agave nektar
• 0.5 teaspoon Sunflower lecitin (optional)
• 1/4 teaspoon real Vanilla
• 1 tablespoon Blood orange juice
• Zest from one large Blood orange juice
• 2 tablespoons raw Tahini

Slowly melt the Cacao butter in a water bath. In a bowl, add the melted Cacao butter and Sunflower lecitin and whisk until the lecitin is melted. Add the rest of the ingredients and stir by hand until incorporated. Pour the chocolate in silicone forms and let them chill in the fridge. If you need them quick, put them in the freezer and they will be ready in about 30 min.

No-Stress Tahini bites


• 100 g, 2 dl finhackat Kakaosmör
• 2 msk raw Kakaopulver
• 1 msk Mesquite
• 1.5 tsk Ashwagandha pulver (valfritt)
• 2 msk mörk Agave nektar
• 0.5 tsk Solroslecitin (valfritt)
• 1 krm äkta Vanilj
• Zest från en stor Blodapelsin

• 1 msk jos från Blodapelsin
• 2 msk raw Tahini

Smält sakta Kakaosmöret i ett vattenbad. I en skål tillsätt sen det smälta Kakaosmöret med Solroslecitinet och vispa för hand tills lecitinet har lösts upp. Tillsätt sen resten av ingredienserna och rör om tills blandat. Häll upp i silikonformar och ställ i kylen för att stelna. Om du behöver chokladen snabbare, ställ dem i frysen så är de färdiga efter ca 30 min. 



I've got some of the cacao butter left, think I'm going to keep it in the bathroom for a skin balm.

Raw Dessert Pizza (nut free!)

Hi guys!! If you missed the dessert pizza eLetter I sent out yesterday, don't be sad here it is! And if you want to subscribe, go to the subscribe-box in the upper right corner. 

I did a raw dessert pizza and succeeded to create a pizza bottom resembling shortcrust pastry *mmmmmm...* You know, with a gorgeous melt-in-your-mouth quality. Yet it is stiff enough to hold as a regular pizza slice. The pizza sauce is a raw chocolate cream with lucuma and purple corn. I decorated my pizza with what I had at home, goji berries, yellow kiwis, blood oranges and kumquats. Find your own magic topping and go crazy!






Raw Dessert Pizza(Nut free)
In swedish further down.

Bottom

• 1 cup shredded Coconut (grind into a flour)
• 0.5 cup shredded Coconut (keep as it is)
• 2 tablespoons virgin Coconut oil
• 2 tablespoons Water
• 1/4 cup Lucuma
• 1 pinch of Himalayan salt
• 2 pinches of Cardamom powder
• 1/4 teaspoon real Vanilla
• 1 teaspoon organic Lemon juice
• 0.5 teaspoon zest from an organic Lemon
• 3 teaspoons light Agave or honey

Grind the 1 cup of shredded Coconut in a coffee grinder or blender into a flour. Add all of the dry ingredients into a bowl and stir by hand. Pour into a food processor and add the rest of the ingredients. Process until you have a dough. Work the dough with your hands in the bowl and press it down on a pretty plate to create a pizza crust. Continue with the pizza sauce!

Pizza sauce

• 0.5 cup virgin Coconut oil (melt in a water bath)
• 3 tablespoons raw Cacao powder
• 1 tablespoon Purple corn
• 2 tablespoons Lucuma
• a pinch of Himalayan salt
• 0.5 teaspoon Sunflower lecitin
• 3 tablespoons dark Agave
• a few drops Pepper mint essence or orange juice

Melt the Coconut oil and add the Sunflower lecitin. Whip by hand until the lecitin is incorporated. Then add the rest of the ingredients and whip until creamy. Pour over the pizza bottom. 







Raw Dessert Pizza, (Nötfri)

Pizzabotten

• 2 dl riven Cocos (mal till möl i en kaffekvarn etc.)
• 1 dl riven Cocos (som den är)
• 2 msk Vatten
• 0.5 dl Lucuma
• 1 nypa Himalayasalt
• 2 nypor malen Kardemumma
• 1 krm äkta Vanlij
• 1 tsk ekologisk Citronjuice
• 0.5 tsk zest från en ekologisk Citron
• 3 tsk ljus Agave el honung

Mal 2 dl riven Cocos till ett fint mjöl i en elektrisk kaffekvarn eller blender. Häll i en bunke och tillsätt sen övriga torra ingredienser till bunken och blanda för hand. Häll blandningen i en matberedare och tillsätt alla ingredienser. Processa tills du har en deg. Häll degen tillbaka i bunken och jobba ihop den med händerna. Platta ut den på ett fint fat till en pizzabotten. Fortsätt med pizzasåsen!

Pizzasås

• 1 dl virgin Cocosolja (smält i ett vattenbad)
• 1 msk Purple corn
• 2 msk Lucuma
• en nypa Himalayansalt
• 0.5 tsk Solroslecitin
• 3 msk mörk Agave
• ev. några droppar Mint essens eller Apelsinjuice. 

Smält Cocosoljan i ett vattenbad. Häll i en bunke och tillsätt Solroslecitinet. Använd en visp för att få lecitinet att lösa upp dig helt. Tillsätt då resten av ingredienserna och vispa tills du har en krämig konsistens. Häll såsen över pizzabotten och dekorera med valfri topping.

Balls of Steel for Heroes




Happy Tuesday folks! 

This is a post to honer all of you disobetient heroes out there. (I even made a little recipe for you). Thank you for your balls of steel. The world would not spin if everybody played by the rules, stood in line, waited for their turn, controlled their emotions, kept quiet, never rocked the boat, never challenged what is socially accepted. There is an acute limit of free thinkers in the world, so thank you for being one and doing things in your own unique way. 

I'm all for healthy disobedience of course. No one never have to obey any rule, that is not aligned with their own personal Truth. 




These balls have ingredients that supports the inner Hero in you! 

• Good fats and amino acids from the Cacao butter and Hemp to nurture, ground and to keep you alert. 
• Maca to balance your hormones, boost your strength, endurance and energy. Also Maca is an adaptogen herb that has the ability to absorbe stress.
• Cacao gives a wonderful edge of progressiveness, a bit like coffee but without the negative effects. Great for heroes that need to get on it. Cacao also brings cannabinoides which gives a natural high, that opens up for visionalizing and spreading the message of Love. 


Balls of steel for Heroes, makes 20 balls.

• 60 g or 0.5 cup shredded Cacao butter.
• 1 cup Dates (pitted but not soaked)
• 1 cup hulled Hemp seeds
• 2 pinches of Himalayan salt
• 1/4 teaspoon real Vanilla
• 5 tablespoons raw Cacao powder
• 1 tablespoon Maca
• 3 tablespoons Lucuma

Slowly melt the Cacao butter in  a water bath. Meanwhile pit the dates. Combine the melted Cacao butter with the Hemp seeds and make a paste in your food processor. Add the dates and process. Add the rest of the ingredients and process until incorporated. Form into balls and roll them in shredded coconut. These are best enjoyed well chilled.

De här bollarna är gjorda på en bas av hampafrö och kakaosmör; bra fetter som håller din hjärna alert, kryddade Maca för stärka upp och grunda med sin effekt på hormonerna. 

• 60 g eller 1 dl krossat Kakaosmör (ska bli 0.75 dl som smält)
• 2 dl Dadlar (urkärnade men ej blötlagda)
• 2 dl skalad Hampa
• 2 nypor Himalayasalt
• 1 krm äkta Vanilj
• 5 msk raw Kakao
• 1 msk Maca
• 3 msk Lucuma

Smält Kakaosmöret försiktigt i ett vattenbad. Under tiden, kärna ur Dadlarna. Mixa det smälta Kakosmöret med Hampafröna till en pasta i en matberedare. Tillsätt Dadlarna och mixa tills du har en deg. Tillsätt resten av ingredienserna och mixa tills blandat. Forma bollar som du rullar i riven cocos. Dessa kommer bäst till sin rätt väld kylda.

Simple Chia pudding Pie



Hi everyone! 

Yesterday Jakob wanted to make a raw dessert, so we went into the kitchen to throw something together. He was a bit shaky, asking for directions :) I'm not much for giving all the details when I show how to make a raw dessert. You learn best by the discipline of trial & error, and if you get some space to figure things out for your self, your intuition is with you and that's when magic really starts to happen. 

We didn't put any coconut oil in the filling this time. Instead we decided to make a chia pudding filling. For those of you who is new to chia, the seeds swells in liquid and forms a gel, a bit like flax seeds. Chia serves as a stabilizing agent you can have a lot of fun with! 

This is not the fancy sort of engineered raw pie you'd make to impress your mother in law. It's an impromptu pie for all of you who love this category of raw desserts. Few ingredients, basic flavors and no fuss :) You can vary this pie in a million ways, using your favorite berries and fruits, add super foods and spices. 


Variations:

• If you use blueberries, add a squeeze or two of lime. Lime enhances the blueberry flavor, and also makes pink marks in the blueberry filling (great for decoration).

• If you use raspberries, skip the salt. Salt and raspberries DON'T match!

• Experiment with the nuts used in the base. Have you tried pistaschios? You will be amazed of how gorgeous they are together with the dates. You can add some whole pistachios to the base to make it crunchy.

• Want to go nut free? No problems. Substitute the 1 cup of nuts with 0.5 cup pumpkin seeds and 0.5 cup of shredded coconut. 

• Use cardamom, nutmeg and / or cinnamon as a seasoning for the base. 


Jakob's Simple Chia pudding Pie, serves three.

For the base

• 1 cup of Dates (remove two dates to reduce the sweetness)
• 1 cup of Nuts (macadamias, pecans etc)
• 1/4 teaspoon real Vanilla (the black seeds from a pod)
• A pinch of Himalayan salt

Pit and soak the Dates for 5 minutes. Grind the nuts into a flour in your blender or food processor. Add the rest of the ingredients and process until you have a dough. Press down the dough on a plate or pie form measuring about 8 inches (20 cm) across.


Filling

• 1 cup Berries of your choice
• 3 teaspoons of light Agave nectar or honey
• 2 tablespoons of Chia seeds
• 1/4 teaspoon real Vanilla
• half a banana

Add all of the ingredients to your blender. Pour the filling over the base and add some berries on top. Put in the fridge to chill a couple of hours or overnight.

Jakobs Enkla Chiapudding Paj, ca tre bitar

Pajdeg

2 dl Dadlar (ta bort 2-3 dadlar för att reducera sötman något)
• 2 dl Nötter (macadamia el pecannötter)
• 1 krm äkta Vanilj (det svarta pulvret)
• 1 nypa Himalayasalt

Kärna ur och blötlägg Dadlarna i 5 min. Kör nötterna i en matberedare tills du får ett mjöl. Tillsätt då övriga ingredienser och mixa till en deg. Forma ett pajskal av degen på ett fat eller en liten pajform som mäter ca 20 cm.

Chiafyllningen

• 2 dl Bär (tex hallon, blåbär och eller jordgubbar).
• 2 msk Chiafrön
• 1 krm äkta Vanilj
• en halv banan
• 1 msk Acaíbär pulver, för extra näring (frivilligt)

Kör i en mixer och häll fyllningen över pajskalet. Dekorera med mer bär och ställ i kylen några timmar eller över natten för att få en mer puddinglik konsistens.
