Let's make a better world, shall we? Let's Occupy our own dreams!

Aloha beautiful one!

• This post is about how we can use our vision to create a better world, by focusing on what we want.
• I've been creative in the kitchen and made a special cake you can read more about further down..
•..and made a whimsical lamp with Jakob.

We have an Occupy movement now, starting at Wall street. People are angry with the system. They blame "them" that made it all go wrong. I love that people are starting to wake up, it's not a day too soon. The world is a deeply unjust place to live in for the majority of people. But stop a while and think about it. Can we adjust this just a little bit so that the movement can have a stronger impact? If we put all our focus on what's wrong, in anger, frustration even desperation.. Than that's what we create. We know that we're angry for sure, but what would happen if we sat down, using that strong desire and started focusing on what we want? Addressing to the "leaders" (= puppets in the game) in anger, only makes us Underdogs, Victims. In that position, we can create no good. Because this is about creating. The old, false banking system must fall down into crumbs. It's been prisoning us for centuries, and can no longer do so for a human friendly life on earth, where love rules, not greed. It is time now to turn over a new leaf for the future on earth and together create a new chapter - the greatest one ever seen.

The big question is: What is Your dream vision about the new world? What would it look like?

Now we need to unify and keep our focus on the beautiful vision of the future. This is where we are truly powerful. Not in angry masses on the streets. The people that rule America and has ruled the world for quite some time now, the obscenely wealthy and mighty power-families, people in the secret societies, couldn't care less about some angry people in the streets. They just carry on with their agenda as if non of this ever happen. Forget about Obama, he's not the one in control. He never was. He's a pretty looking paper figure that runs the errands of the uglier fishes. He's a one dimensional kliche, used to distract the public from the real power figures, covering up their plans with a juicy rhetorical strategy. You can call it a "conspiracy theory" if you like, but you know, that there's always a bigger fish, lurking behind the scenes, pulling the threads, making a puppet show of the politicians we see in the newspaper and on tv. And we all buy it. We consume the lie. So, why are we angry about it? We need to face the truth of who is who in this Game. Again, we are the 99%. With our desire and will to create a better world, we can achieve SO much! But, we've become cynical as a result of too much bad input and a lack of faith in the divine.

I believe in the power of prayer. Every thought is a pray, every feeling, action, spoken or written word is a pray. So is your intentions, desires, visions and dreams. Also things you create with your hands. These are your "prayer tools" that you use every day, consciously or unconsciously to create your life. In fact, the very point you are at now, is a result of the praying you've been doing, during your life. We need to cultivate good prayers, turn every day into a beautiful, grateful pray.

To make this shift from being angry and frustrated into focusing on what beautiful things you wish to create, you need to open your heart. Your visionary mind needs the energy from the heart to flow through. There's many ways to do this of course, but I was inspired to make my vision into a cake. So I went to the kitchen and came up with a raspberry pink, chocolate dense, super food:ish cake. Nut free.
The opening of the heart also includes playing. You can't be an underdog as long as you have fun, being on top with the greatest, happiest vibe. To give the cake an element of fun, I added chocolate ornaments.

Open Your Heart Cake
(in swedish further down)

Cookie dough base

• 0.5 cup Dates
• 05 cup Pumpkin seeds
• 1 tablespoon raw Cacao powder
• 1 tablespoon Mesquite
• 1 tablespoon Maca
• a pinch of Himalayan salt
• 1 tablespoon virgin Coconut oil
• 1/4 cup Water

Pit and soak the Dates for 10 minutes. Make a flour of the Pumpkin seeds, using a coffee grinder or blender. Add everything to a food processor and process until you have a dough. Press down the dough in a spring pan using your hands. Focus on a beautiful vision, the opening of your heart or love.

Raspberry Filling

500 g frozen Raspberries (1.5 cups as thawed and save some for decoration)
• 1.5 cup shredded Coconut (grounded into a flour)
• 0.5 cup virgin Coconut oil
• 2 tablespoons Agave nectar, or the sweetener of your choice
• 0.5 cups Water

Thaw the frozen Raspberries in some hot water. They need to be at room temperature to incorporate with the coconut oil later. Make a fine flour of the shredded Coconut by grinding it in a coffee grinder or blender. Add all of the ingredients to a food processor or blender except the coconut oil, and process until completely smooth. Then add the Coconut oil and process 30 seconds more. Use a virgin coconut oil, that is raw/cold pressed. It has a wonderful taste that enhances your desserts to the maximum!

Chocolate cream filling for the pastry bag

• 0.5 cup Dates, pitted and soaked
• 0.5 cup virgin Coconut oil
• 2 tablespoons raw Cacao powder
• 2 tablespoons Mesquite
• 1/4 teaspoon real Vanilla (from pod)
• a tiny pinch of Himalayan salt
• 0.5 cups shredded Coconut
• 1/4 cup Water

Soak the Dates. Make a fine flour of the shredded Coconut by using a coffee grinder or blender. Melt  the Coconut oil in a water bath or in a dehydrator. Add the Coconut flour, Cacao powder, Mesquite, Vanilla, Salt, Dates and Water to a food processor and process. Now add the melted Coconut oil and process until incorporated. Put in a pastry bag with a tip with teeth and put in the fridge to harden enough  so that you can make a pretty line, squeezing the bag. If your pastry bag gets too cold = hard filling, you just warm it up in the dehydrator, alternatively warm it with your hands.

Raw Chocolate ornament

• 1/4 cup virgin Coconut oil
• 2 tablespoons raw Cacao powder
• 2 tablespoons Agave nectar

Melt the Coconut oil in a water bath, or your dehydrator. Add the Cacao and Agave, stir by hand. Pour the melted chocolate in a squeeze bottle and put in the fridge for the chocolate to harden a bit. It's not supposed to come out runny. When the chocolate is ready (try it on your hand first), make ornament shapes on a greaseproof paper that you put on top of a plate. Put the chocolate / plate in the freezer. After 5 minutes, you can carefully remove the chocolate ornaments from the paper. Be super careful! And make many so you have a reserve if they break. Try making the ornaments rather tight. In that way they are easier to handle.

When you have decorated the cake with the chocolate filling, using the pastry bag, you put some of the chocolate ornaments by carefully press them down into the filling. Again, be super careful. Don't stress.

Open Your Heart Cake

Kladdkake-Botten

• 2 dl Dadlar, urkärnade och blötlagda
• 2 dl Pumpakärnor
• 1 msk virgin Cocosolja
• 1 msk raw Kakao
• 1 msk Mesquite
• 1msk Maca
• en nypa Himalayasalt
• 0.5 dl Vatten

• 1.5-2 msk ljus Agavenektar

Tina Hallonen i lite varmt vatten.

The super foods in it has a combination that I love... Both for the taste but mostly for the effect, the synergistic "communication" between them. It was this super food trio that helped me open my heart back in 2007 when I started experimenting with super foods. I'm talking about Maca, raw Cacao and Mesquite. One particular evening, crossing masses of people in the christmas crowd, something I used to hate! I just couldn't cope with crowds and started to feel rather worried about it, about the fact that I had to adjust my everyday life to this discomfort. This evening though, I made a remarkable discovery.. I was actually enjoying being in the former claustrofobic tightness of stressed out people, for the first time in 5 years. This after eating Maca, Mesquite and raw Cacao powder in my smoothies for only three days! I had closed my heart to protect my sensitive inner parts from stress and a crazy world. Now it opened!! So, obviously, I had to put these ingredients into the cake. The raspberries because they are symbol of summer, birthday parties, the inner child and play and for the sake of the pretty color.

I wish with this cake, that the demonstrators in Wall street turn their focus within. Sit in large groups, constantly holding the focus on the vision and holding the vibrational high, in love, abundance, faith, justice, light, the Divine, happiness, joy and victory.

As I wrote in the previous post, we have had some fun in making a new lamp. We've been sitting in the bed at night with paper, scissor, glue and yarn. Our lamp is a manifestation of love, of the magic of life and dreams just like the cake. And every time we see it, it makes us happy, both because it looks wierdly funky, but also because of the genuine love we put into making it. We bought the lamp at a second hand shop that supports homeless people. There we also found an old, beautiful book with the title "The laughing human", brilliant we thought! We cut heart shapes of the leafs from the book and used a marker pen to highlight beautiful words. We also used some old wall papers that the guy living here before us, left in the attic. I'm in love with the idea to make something new out of something old! I can feel a serious addiction rolling in here :)

Until I see you next time, take care and cultivate your visions!

Granola

Hi the beautiful people! It's autumn!

I'm back again after a while of working on the new newsletter and doing some inner processing. A lot of things has happened. I'm throwing out some of my things, creating space and finding new parts of my self (that's wonderful by the way, you should try it!) For instance, try getting rid of old clothes you wore during the peak of your life. They don't fit you anymore, as you are holding on to the past every time you wear them. If you give them away, you just might se another you in the mirror! I gave away a rather girly skirt I used to love, only to find out how much this skirt had hold me back by just sitting in my closet (!) I've done these wardrobe feng shui missions before, but never have I seen so dramatic changes. A pink, girly skirt just isn't me....

This month of october is packed full of interesting earth changes, and I gladly welcome them! What ever happens, needs to happen. For me it feels like years of inner pressure is being relieved and I can finally feel and see the light in the tunnel (and while writing this, I saw a sharp, golden orb in front of me; that's a good omen!) Strangely enough.. I realize I'm made to cope these situations. The spartanian living  during the years at the university, and then living a bohemian life outside the safe social network of a dayjobb and so forth, being unplugged from the grid of madness. I really have nothing to loose of material means.

This is our time now. We, who know how to find glitter on a gray pavement, we who hear birds sing in the park while others just passes by, noticing nothing. We who see shapes in clouds, and potential in every acorn, sea shell, a beautiful leaf or in a smile.

I'm positively sure that this crisis is manageable, and even a chance to readjust things we would like to change in our life. We're entering a new era now. The dawn of humanity, a human friendly, human sustainable world. No more left brain dualism, fear based and god disconnected mind-prissons. I could talk myself warm about politics and the successful *underground* war against the Illuminati administration. ..But this is a blog about raw desserts, right? :D

I've started to surf on this wave of change, and readjusting things in my life that I want to change. Something I haven't felt I had enough time to focus on is handcrafting. But I've realized how much that adds to my life quality, so now I'm full on crafting!! I'm specifically drawn to making beautiful things out of old and used stuff. Today we bought an old vintage lamp for about $5 that we are going to make really funky and special :) I'll put some photos up when it's done!!

...So let's talk about recycling! Let's talk about permaculture!*

Granola is great, because you can throw together pretty much what you have in the kitchen and use the granola to snack on, form them into bars, eat them with almond milk or as a topping on a cake. You can keep some in your purse for those moments when you need to fuel yourself when you're out. Look in your cupboards, jars and drawers. And bring your biggest bowl and start to create your own mix!!

Must have My Granola

I used a 4 liter / 135 oz bowl and basically added everything I had at home. Things you can put in your granola:

• shredded coconut,
• pieces of dried fruits and berries (cranberries, blueberries, black currants, raspberries, strawberries, raisins, dates, apple..)
• cacao nibs,
• buckwheaties, oats and quinoa (you can sprout them, and then dry them in a dehydrator),
• pumpkin seeds, sesame seeds, melon seeds,
• nuts of all kinds,
• super foods like maca, mesquite, purple corn, acai, camu, algeas, schizandra berries...
• 1-2 tablespoons of cinnamon,
• 0.5 teaspoon himalayan salt,
• 2 cups of raw freshly pressed apple juice

When you have your big bowl of dry granola ingredients, you pour about 2 cups of apple juice over it and stir. (We used apples that we picked from trees nearby, all local and hanging there to rot).

Spread it over the sheets in your dehydrator and let it dry until you have big chunks of sticky granola. Next time I'll put the apple juice in the blender together with one or two bananas as a sweetener, that would be awesome! Or some carrot juice? There's plenty of choices.

I love this, because you have to 1) use your imagination 2) be intuitive and 3) act recycling and permacultural! There is no right or wrong, just YOUR way. This is also super funny to make with kids!
Also be aware that drying currants (red, white, black), raspberries or blueberries takes days in the dehydrator.

*) "Permaculture aims to create stable, productive systems that provide for human needs; it's a system of design where each element supports and feeds other elements, ultimately aiming at systems that are virtually self-sustaining and into which humans fit as an integral part. It's a philosophy of working with nature, of protracted and thoughtful observation (what you have in your kitchen that could fit for a granola, picking apples that nobody use), rather than protracted and thoughtless labor; and of looking at plants and animals in all their function, rather than treating any area as a single project system."

You're so precious, take good care

Personal: My Checklist. What does yours look like?

I recently watched one of the most meaningful movies in a long time. It's with Julia (love her) Roberts, and I know I'm about one year behind, but I finally saw "eat, pray, love". And to sum up the feeling after watching this movie: it's amazing how many pieces of the puzzle that falls into place, once you give yourself some time and space to Breath..

I used to be so good at this. I was spending my days, not chanting, never did, but living an every day life filled with a maximized sense-pressence. Know what I mean?

Singing. A lot. Every day, several hours. Not, humming, but singing o u t   l o u d, seriously, from head to toe, full body of voice, nice voice :) Too shy to perform though. And dancing. Loosing my self in the vivid dreamworld of dance. Lonely dancing in my own little fantasy bubble. Never cared much about the time, only for the weather and rhythm of nature. I haven't owned a watch in years.

If I were to ever find my self with just a liitle more courage than I needed.. I'd sign up for singing lessons. Or kidnapping a friend to join. I have to have someone to giggle through the first 15 minutes, until I can step out of my silly-fiveyearold-bubble and become a sincere grown up. But it's the closeness that's scary. If I'm about to strip soul-naked in front of someone I don't know (or worse - someone I do know) and explode in artistic vulnerability, It takes a lot of.. I don't know, distance? Like, you transform into "someone who sings"? Or how does it work? When I belly dance, I transform into "an entertainer". Though it takes a lot of practice to be comfortable in that role. Not there yet :)

Now I'm a business woman. With grand plans of how it all will result in me walking the beach somewhere with a wild kid running around, walking barefoot with Mr husband-Jakob in a sarong, me that is, ok him too, sarongs are nice. Working 4 hours a week, maintenance work. And doing what I love: Sharing. Giving. Helping. Assisting. Being in the mother energy for all that needs a little comfort and caring, or a lot of it.

This post is all about being true to yourself. I wrote down my own truths, how they look right now.
I'd love for you to share what you're inner checklist looks like! Just a few short, but powerful sentences to capture what feels true to your heart. If you're not clear about what it is, this could be a little enlightening moment for you. Shoot and show me!

My inner Checklist

Up until now (and I count "now" as a rather long, ongoing period), I've been occupied with personal bits, like getting healthy and glowing enough to live my dream, though getting closer every day. And funny enough, it's the people that treated me bad, that I got the most out from, when it comes to dignity, integrity, boundary setting, and feeling my raw truth, standing up for my self and my beliefs, not compromising with the important stuff. But..

With toxic people there's only one rule: when you've learned the lesson they have for you - cut them off your life. (when you get the message hang up the phone).

I read something yesterday that really got my vibe down. Someone, with good company, totally made fun of Gabriel Cousens in a discussion forum with a silly image of him having dollar signs in his eyes and other silly things. They were all talking B.S. about him being so focused on making money. I'd say it's nobody else's business, what business you have for your own life. What your dream looks like, how you want to spend the day of the life that's been given to you. It's your full birth right to be wealthy, in what ever way you need and want to ("wealth", is so much more than money). What I read yesterday in the discussion forum, was such an under dog:ism. If you can't recognize your self, put your self at the top of your life, you sure as *h* can't stand seeing anyone else do that thing ether. So you have to B.S. about it. Sad... Jealousy. It always brings me down seeing or hearing people that can't celebrate other peoples successes. Again, if you can't celebrate others success, you can't celebrate your own, or probably you don't have success in your life.

And what about the war that's going on in the raw food community, between the sub groups? Eating 30 bananas a day or not? Eat as much fruits as you can v.s. eat as little fruit as you can. God... I wish people could stop arsing around with their food, acting like it was some sort of cult and just have a good time. It's like a dear friend of mine always said; don't get lost in your head, it's messy in there. And that's where you end up if you invest all of your ego in your eating. You become very vulnerable.

The last week I have completely snorted the music of the cute man-boy John Mayer, (ok, ok photos and interviews too) *busted*. I discovered him years ago, but re-discovered him just recently. It's so refreshing with people that's comfortable in them self, just doing their thing, know what I mean? Not being so freaked out what others will think.. opinions.. values. And when you've sort of taken someone in, and sensed something that you like, you'll find yourself wanting to know ~everything~. When I've overdosed gorgeous John (actually the message he has there), I'll throw him in the garbage :) Fun ey? ^^
NEXT!! I had a total Alanis Morissette-addiction the period before John. Listen non stop to her music (love the lyrics) every hour, every day for a week. Now I can't stand it. I soaked it all up sort of speak.

I'm tired of spiritual prestige. Of spiritual got-to-do-it-all-right-love-and-light. I'd love for people to make up their own set of rules, rather than following others :S That would be so liberating! Make your own checklist, on what's nearest and dearest to you. You don't have to get the spiritual "high score", in saying all the right words. Realize that you are the guru you've been waiting for. If you like to screw around - do it! If you like Herb - smoke it! If you like unnecessary high heals shoes - for the love of God, go get those shoes! And if you're a woman, surrender to this lovely quote I found today:

"Well behaved women seldom make history"

Doesn't it feel good, letting go a little bit? Loosen up? Embrace All of you? I sure think so ^^
Tomorrow, I'll buy miself new boots. Expensive ones, I don't really have a budget for them, but gotta have them. I'm not a shoe kind of woman, but something must have changed inside of me, because suddenly I just have to have them. You only live once, make the best out of it, and right now these new shoes will warm my heart every time I look at them, take them out for a walk for months, and months to come. That's good enough reason for me!! ..I who could only feel good if I had done all the "right things" during the day: eaten insanely healthy stuff, done my yoga and exercising (pilates), being a slave under the spiritual books I read, letting the words and meanings in the books become my truths, rather than creating my own, from life experience, having my home in a pixel perfect condition and on top of that trying to act bohemian (???) haha.. funny combination. I just turned 30, so I guess I have all the distance now that I need to see right through me with love. Ok.. Enough closeness now, otherwise I'll start talking about things I wouldn't want my mum to read..

And don't forget to do that checklist!

With love
/Karolina~

Fun with a raw Banana split (nut free!)

'

Karolina & Jakobs raw love Banana Split, (in swedish further down)
The recipes serves 4. The serving shown in the images serves 2.

Fudge Ice cream (with a sponge cake-flavor)

Grind into a fine flour:

• 0.5 cup Pumkin seeds
(use an electric coffee grinder, a high powered blender or your food processor)

To the food processor add:

• the Pumkin seed flour
• 3 bananas (about 100 g each)
• 4 tablespoons Lucuma
• 3 tablespoons Mesquite
• 1/4 teaspoon real Vanilla
• 2 pinches of Himalayan salt

Process until creamy.

• Add 0.5 cup of VIRGIN Coconut oil (otherwise you loose so much of the great taste, as non-raw coconut oil doesn't taste of anything).

Process to incorporate (about 30 seconds). Pour half of it into a bowl and place it in the freezer while
you start making the chocolate ice cream:

Chocolate Ice Cream

To the food processor (with half of the Fudge Ice cream batch in it) add:

• 0.5 cups of baby Figs (soaked for 30 min)
• 7 tablespoons raw Cacao powder
• 3/4 cup Water
• 1-2 pinches of Himalayan salt
• 1 tablespoon Agave nectar or honey

Process until smooth. If you want, you can place the Fudge Ice cream batch from the food processor in a bowl, and just add to the empty food processor the soaked Figs to make a fig-paste, before you add the rest of the ingredients. In that way you ensure that there will be no bits of the figs in your ice cream.

Put in a bowl in the freezer.

Melted Chocolate on top

• 55 g Cacao butter, melt it in a water bath
• 2 tablsepoons raw Cacao powder
• 1 pinch of salt
• 1/8 teaspoon real Vanilla
• 2 tablespoons Agave
• 2-3 teaspoons Lucuma (optional)
Add the rest of the ingredients to the melted Cacao butter and stir by hand. Wait with pouring it over the ice cream, as it needs to cool down first to thicken.. Patience dear Jedi, you'll get your dessert :)

Serving

Put some of the Chocolate ice cream on a pretty plate. Place two bananas over, and some Fudge ice cream balls on top. Pour the melted (thick) chocolate over and serve. You can also sprinkle some shredded coconut, cacao nibs, mullberries, hemp seeds or what ever you like.

Share, share, share with your network. Who knows, you might have a Banana Split Luny that needs this dessert recipe in his/hers life? We'll sure make this one many more times!

What road are you choosing?

The mayan calendar ends in late october 2011, according to the Swedish author Carl Johan Calleman. The months until then will be ever so transforming for all creatures on earth, also because of the four comets that are passing earth, that the Hopis and Mayan prophecy is talking about. Comets Honda, Levy, Elenin and Holmes, may play a huge roll in our future growth. They are all paying us a visit, as they enter our orbit and passes by during a period of three months from august to october this year.

The two most interesting stars in the prophecy is comet Elenin (the blue star Kachina) and comet Holmes (the red star Kachina). Briefly the prophecy says that the blue star Kachina/Elenin, together with the two comets Honda and Levy (the guardians of the north and south poles) will return the Earth to it's natural rotation which is counter-clockwise. After this is done, the red star Kachina is entering our orbit as I understand. This star is known as the "purifier". It has a super massive body, and will change the life of humanity and earth forever, due to gravitation and electromagnetic forces. The prophecy says: "On the day of purification, the Earth, her creatures and all life as we know it will change forever. Every living thing will be offered the opportunity to change from the largest to the smallest thing. The way through this time is to be found in our hearts and in reuniting with our spiritual self. Everything we experience is all a matter of choice."

I think this is pretty amazing. I feel in my heart that these comets are a blessing for us. I mean, if humanity haven't got it by now, it might take four comets (one of a super massive body), entering our orbit with a vast gravity to make us start questioning our daily focus and fully awaken to love like never before. Imagine this huge flower bud, exploding of the collective love-awakening, forming into a super naturally beautiful flower. I have no idea how life on Earth will be like, as these comets passes by, the only thing I know, is to put my focus on the Divine Plan behind this, and celebrate the processes that are going to transform us into the beautiful beings that we are. May it begin! ..Though, to flow thorough these transformations in grace and ease, it is ever so important to be aware of where you put your focus.

Are you choosing the road to happiness or pain?

I think that in the turbulent times that are now, it's more important than ever to decide on what thoughts are going to form your life, your future. One road leads to happiness, the other one to pain. Sometimes we put our foot on one of the roads, being reminded of what we want or don't want. It's up to you to choose what road you are going to travel in the near future. We become what we think, simply because thoughts trigger feelings, feelings becomes actions, actions become habit, habit becomes character, character becomes destiny. Why not decide once and for all to choose the road to happiness, and throw the junk-thoughts in the trash, start feeding you with quality thoughts of the visions you most of all wish for?

My vision is of a future where we gather, start to co-create, form new communities, see others as "family" and not just as "strangers". And that the collaborations and communities we form, are open for all to speak their mind, also children and people with not so strong voices, not born with the gift of speaking or taking on a leadership - because everyone matters in a Family. I also believe that we need better alternatives to democracy, an updated version of it. The old pyramid shaped power structure are gone, power is no longer of any interest. Creating and sharing is the new focus. How can I give, share, help today? How can I assist? How can I create what I most of all wish for? No more fear, standing on our knees, no more accepting of oppression and corruption. Fear is what is happening, when we don't focus on what we want, on our dream~vision. This is how you shift your frequence from fear to love.

Have you ever felt sick to your stomach and the more you focus on how bad you feel, the worse you feel? Have you then tried to think of something that gives you energy, fills you with strength and faith? What happens then with your physical condition? I've personally experienced having a stomach flu, but with hardly any symptoms at all. I had the (very aggressive) virus in my body, but not much happened.

I can sense that we are entering The age of Heart, the age of Sharig, and it all starts in shifting our thoughts: the frequency that you are acting on, that you are spreading with your entire being.

Love and a splendid future~

Farmers Market Peach Cobbler

Hi guys! I went to the farmers market last weekend to catch me some juicy peaches for the Peach Cobbler I was talking about. Peaches are in season right now, so what could be better than whipping up a quick and easy Peach cobbler? I made a simple pie crust, and poured a creamy peach smoothie over, sprinkled with some pecan, cinnamon and agave cobbler-crumbs and topped it witch slices of peaches and more crumbs. Easy peasy!! And way more decadent and satisfying than I could ever describe, you just have to taste it!

Health benefits of peaches

Why I was soo drawn to peaches might be my body trying to tell me to eat that potassium (kalium) that peaches is very rich in. More interesting facts about the health benefits of peaches are that they contain beta-carotene, which the body transforms into vitamin A. They also contain:

• Lycopene
• Lutein

There are several studies and indication that both lycopene and lutein can help prevent macular degeneration, cancer and heart disease.

• High i fibre
• Vitamin C
• Usable Iron (as much as in spinach)

A Farmers Market Peach Cobbler
(for Swedish, scroll further down)

For the Crust

• 200 g or 1 cup Dates, pitted and soaked for 10 min.
• 300 g or 3 cups dry Walnuts (you can pre soak them and dry them in the dehydrator)
2 pinches of Himalayan salt
• 2 teaspoons Mesquite flour

Grind the Walnuts in a food processor with the salt and Mesquite, set aside in a bowl. Make a date paste of the Dates and then add the dry ingredients to the paste. Process until you have a dough. Press down the dough in a pie form (or three small ones as shown in the images), using your hands and a wet spoon to even the surface for a prettier finish. Put in the fridge to chill while making the Peach Smoothie!

Peach Smoothie Filling

• 120 g or 1 cup of dry Cashew nuts (you can pre soak them and dry them in the dehydrator)
• 400 g or 6-7 small Peaches
• 1 teaspoon of Lime juice
• 2 tablespoons of Virgin Coconut oil (hard but soft enough to scoop up with a spoon)
• 1 pinch of Himalayan salt
• 3 teaspoons Agave nectar, or the sweetener of you choice
• 1/4 teaspoon real Vanilla

Grind the Cashews into a fine flour, using a coffee grinder or a high powered food processor. Put aside in a bowl. Add the rest of the ingredients but the Coconut oil to the food processor and process until completely smooth and super creamy. Now add the Coconut oil and process for maximum 30 sek.
Pour over the pie crust, put in the fridge to chill, while you make the Pecan Cobbler Crumbs!

Pecan Cobbler Crumbs

• 100 g or 1 cup of dry Pecans (you can pre soak them and dry them in the dehydrator)
• 2 pinches of Himalayan salt
• 1 teaspoon of Agave nectar, or honey
• 1/4 teaspoon Cardamom
• 1/4 teaspoon Cinnamon

Pulse the Pecans shortly in a food processor or blender. You want crumbs, not a flour. Put the crumbs in a bowl and add the rest of the ingredients and stir by hand.

Sprinkle the crumbs over the filling, and cut slices of Peaches to put on top. Add some more of the crumbs over the Peach slices. Put in the fridge to chill for 30 min and EAT!

Potassium & Health, plus a Soul-feeding weekend

Hi friends!
I had an amazing weekend, visiting one of my favorite cities in Sweden (Norrköping) for the first time in almost a decade. I spend a couple of years there in my early twenties that had a huge impact on me.

I met up with old friends I haven't spoken face to face with in such a long time. We walked the streets I used to walk and I could remember old thoughts, feelings, conversations, aha-moments that I got walking there for the first time. It was like tying two loose ends together. I felt like a whole new person when I got back home. ^^

I did a hair mineral analysis a few weeks ago, so now I'm eating extra of vitamin C, B, A, E, and minerals like zinc, magnesium, niacin, manganese, chromium and potassium.
These supplements are based upon my individual metabolic type and my unique mineral pattern.
I'm sure I eat nutritious food and all, but I have had deficiency in hydrochloric acid (saltsyra) so I haven't been able to absob the nutrition. But one thing that struck my eye was one mineral - potassium (kalium). It plays an important role for people with anxiety and stress disorders. It is one of the most important minerals in the body, without it you just can't be healthy and feel great.

• How it works in your body: Potassium transmits electrical signals between cells and nerves. It has alkaline properties, so it is a very important mineral which helps to maintain a good PH level and water inside the body (it is an electrolyte). It is required for keeping heart, brain, kidney, muscle tissue and other important organs in good condition.

• Effects: It is considered as a perfect stress buster, and plays an important role for people suffering from anxiety and stress. It also assists in metabolic processes and extracting the energy out of nutrients, among a great number of other things.

• Where do I find potassium? Dried mangoes and apricots, peas, tomatoes, leafy greens, lima beans and potato skins, bananas, avocados, dates, kiwi, raisins, melons, citrus fruits, nuts (almonds) and chocolate. And if you eat animal protein; chicken, whole milk, fish, clams.

So.. On the agenda for the other half of this week, I'm planning a new (cute) dessert recipe for you :) I'm also in the middle of planning my new bussines: RAW DESSERT CATERING! I already got my first order *thrilled*. I'm actually in the middle of a lot of things concerning Love raw and The Raw Dessert Kitchen, so I'm a busy bee right now. You'll see the result further down the road. I'm glad and grateful that you want to walk with me.. Cross the bridge with me..

Love

In a food processor, grind the nuts into a flour and add the rest of the ingredients. Process until completely smooth (can require 5 minutes of processing). Pour about 1 cm of the filling in a pretty bowl and place in the freezer to harden a bit while you make the Cookie Crumbles.

Cookie Crumbles

Grind the Cashews in a food processor or coffee grinder to make a nut flour. Add the rest of the ingredients and process until completely smooth. Pour about one centimeter of the Vanilla Filling over the Chocolate Filling and the Cookie Crumbles. Put in the freezer until hard and then continue to add layers. Put some raw Cacao in a tea ball and puff it on top of the Tiramisu. Thaw before eating.

Please share the recipe with your friends!
