Fun with a raw Banana split (nut free!)


'

Karolina & Jakobs raw love Banana Split, (in swedish further down) 
The recipes serves 4. The serving shown in the images serves 2. 

Fudge Ice cream (with a sponge cake-flavor)

Grind into a fine flour: 

• 0.5 cup Pumkin seeds
(use an electric coffee grinder, a high powered blender or your food processor)


To the food processor add: 

• the Pumkin seed flour
• 3 bananas (about 100 g each)
• 4 tablespoons Lucuma
• 3 tablespoons Mesquite
• 1/4 teaspoon real Vanilla
• 2 pinches of Himalayan salt

Process until creamy. 

• Add 0.5 cup of VIRGIN Coconut oil (otherwise you loose so much of the great taste, as non-raw coconut oil doesn't taste of anything). 

Process to incorporate (about 30 seconds). Pour half of it into a bowl and place it in the freezer while
you start making the chocolate ice cream:



Chocolate Ice Cream

To the food processor (with half of the Fudge Ice cream batch in it) add:

• 0.5 cups of baby Figs (soaked for 30 min)
• 7 tablespoons raw Cacao powder
• 3/4 cup Water
• 1-2 pinches of Himalayan salt
• 1 tablespoon Agave nectar or honey

Process until smooth. If you want, you can place the Fudge Ice cream batch from the food processor in a bowl, and just add to the empty food processor the soaked Figs to make a fig-paste, before you add the rest of the ingredients. In that way you ensure that there will be no bits of the figs in your ice cream.

Put in a bowl in the freezer. 

Melted Chocolate on top

• 55 g Cacao butter, melt it in a water bath
• 2 tablsepoons raw Cacao powder
• 1 pinch of salt
• 1/8 teaspoon real Vanilla
• 2 tablespoons Agave
• 2-3 teaspoons Lucuma (optional)
Add the rest of the ingredients to the melted Cacao butter and stir by hand. Wait with pouring it over the ice cream, as it needs to cool down first to thicken.. Patience dear Jedi, you'll get your dessert :) 

Serving

Put some of the Chocolate ice cream on a pretty plate. Place two bananas over, and some Fudge ice cream balls on top. Pour the melted (thick) chocolate over and serve. You can also sprinkle some shredded coconut, cacao nibs, mullberries, hemp seeds or what ever you like.

Karolina & Jakob's raw kärleks Bananasplit
Receptet räcker till 4 portioner. Bananaspliten på bilderna räcker till 2 pers.

Kolaglass (med sockerkaks-smak!)

Mal till fint mjöl: 

• 1 dl Pumpafrön 

Använd en elektrisk kaffekvarn, en kraftfull mixer eller din matberedare. 

Tillsätt till matberedaren:

• Pumpafrö-mjölet
• 3 bananer (ca 300 g totalt)
• 4 msk Lucuma
• 3 msk Mesquite
• 1 krm äkta Vanilj
• 2 nypor Himalayasalt

Mixa tills slät. Tillsätt då:


Raffinerad Cocosolja (varmpressad) smakar ingenting, så använd hellre raw/virgin Cocosolja i recepten för att få fram de utsökta smaker som kommer av cocosen. Mixa ihop smeten, max 30 sek mixande. Häll hälften av Kolaglassen i en skål och ställ i frysen. Fortsätt med Chokladglassen!


Chokladglass

Till matberedaren med hälften av Kolaglass-smeten i, tillsätt:

• 1 dl baby-Fikon som blivit blötlagda i 30 min
• 7 msk raw Kakaopulver
• 2 extra nypor salt
• 1 msk Agave nektar el. honung (smaka av)
• 1.5 dl Vatten

Mixa tills slät. Om du vill kan du först skrapa ur Kolaglassen ur matberedaren och mixa Fikonen till en pasta innan du tillsätter Kolasmeten med resten av ingredienserna. På så sätt säkerställer du att det inte blir några bitar av Fikon i din glass. Nu har du en fin chokladsmet, häll den i en skål och ställ i frysen. 

Smält Choklad

• 55 g Kakaosmör, smält i ett vattenbad
• 2 msk raw Kakaopulver
• 2 msk Agave (smaka av)
• en nypa Himalayasalt
• 1/8 tsk äkta Vanilj (ett halvt kryddmått)
• 2-3 tsk Lucuma (valfritt)

Smält Kakaosmöret och tillsätt övriga ingredienser, rör för hand. Viktigt nu är att vänta tills chokladen svalnar. Den blir tjockare och tjockare ju mer den svalnar. Du vill inte hälla på den när den är tunn, för då blir det bara vattnig choklad. Så det gäller att ha lite tålamod :) 

Servering

Lägg några kulor av Chokladglassen på ett fint fat, lägg två bananer över. Gör kulor av Kolaglassen och lägg över bananen. Ringla den smälta chokladen över. Du kan toppa med cocos, kakaonibs, hampa eller vad du tycker är fint!

What road are you choosing?






The mayan calendar ends in late october 2011, according to the Swedish author Carl Johan Calleman. The months until then will be ever so transforming for all creatures on earth, also because of the four comets that are passing earth, that the Hopis and Mayan prophecy is talking about. Comets Honda, Levy, Elenin and Holmes, may play a huge roll in our future growth. They are all paying us a visit, as they enter our orbit and passes by during a period of three months from august to october this year. 


The two most interesting stars in the prophecy is comet Elenin (the blue star Kachina) and comet Holmes (the red star Kachina). Briefly the prophecy says that the blue star Kachina/Elenin, together with the two comets Honda and Levy (the guardians of the north and south poles) will return the Earth to it's natural rotation which is counter-clockwise. After this is done, the red star Kachina is entering our orbit as I understand. This star is known as the "purifier". It has a super massive body, and will change the life of humanity and earth forever, due to gravitation and electromagnetic forces. The prophecy says: "On the day of purification, the Earth, her creatures and all life as we know it will change forever. Every living thing will be offered the opportunity to change from the largest to the smallest thing. The way through this time is to be found in our hearts and in reuniting with our spiritual self. Everything we experience is all a matter of choice."

I think this is pretty amazing. I feel in my heart that these comets are a blessing for us. I mean, if humanity haven't got it by now, it might take four comets (one of a super massive body), entering our orbit with a vast gravity to make us start questioning our daily focus and fully awaken to love like never before. Imagine this huge flower bud, exploding of the collective love-awakening, forming into a super naturally beautiful flower. I have no idea how life on Earth will be like, as these comets passes by, the only thing I know, is to put my focus on the Divine Plan behind this, and celebrate the processes that are going to transform us into the beautiful beings that we are. May it begin! ..Though, to flow thorough these transformations in grace and ease, it is ever so important to be aware of where you put your focus. 


Are you choosing the road to happiness or pain?

I think that in the turbulent times that are now, it's more important than ever to decide on what thoughts are going to form your life, your future. One road leads to happiness, the other one to pain. Sometimes we put our foot on one of the roads, being reminded of what we want or don't want. It's up to you to choose what road you are going to travel in the near future. We become what we think, simply because thoughts trigger feelings, feelings becomes actions, actions become habit, habit becomes character, character becomes destiny. Why not decide once and for all to choose the road to happiness, and throw the junk-thoughts in the trash, start feeding you with quality thoughts of the visions you most of all wish for?  

My vision is of a future where we gather, start to co-create, form new communities, see others as "family" and not just as "strangers". And that the collaborations and communities we form, are open for all to speak their mind, also children and people with not so strong voices, not born with the gift of speaking or taking on a leadership - because everyone matters in a Family. I also believe that we need better alternatives to democracy, an updated version of it. The old pyramid shaped power structure are gone, power is no longer of any interest. Creating and sharing is the new focus. How can I give, share, help today? How can I assist? How can I create what I most of all wish for? No more fear, standing on our knees, no more accepting of oppression and corruption. Fear is what is happening, when we don't focus on what we want, on our dream~vision. This is how you shift your frequence from fear to love.


Have you ever felt sick to your stomach and the more you focus on how bad you feel, the worse you feel? Have you then tried to think of something that gives you energy, fills you with strength and faith? What happens then with your physical condition? I've personally experienced having a stomach flu, but with hardly any symptoms at all. I had the (very aggressive) virus in my body, but not much happened. 


I can sense that we are entering The age of Heart, the age of Sharig, and it all starts in shifting our thoughts: the frequency that you are acting on, that you are spreading with your entire being.

Farmers Market Peach Cobbler





Hi guys! I went to the farmers market last weekend to catch me some juicy peaches for the Peach Cobbler I was talking about. Peaches are in season right now, so what could be better than whipping up a quick and easy Peach cobbler? I made a simple pie crust, and poured a creamy peach smoothie over, sprinkled with some pecan, cinnamon and agave cobbler-crumbs and topped it witch slices of peaches and more crumbs. Easy peasy!! And way more decadent and satisfying than I could ever describe, you just have to taste it!


Health benefits of peaches

Why I was soo drawn to peaches might be my body trying to tell me to eat that potassium (kalium) that peaches is very rich in. More interesting facts about the health benefits of peaches are that they contain beta-carotene, which the body transforms into vitamin A. They also contain:

• Lycopene
• Lutein

There are several studies and indication that both lycopene and lutein can help prevent macular degeneration, cancer and heart disease.

• High i fibre
• Vitamin C
• Usable Iron (as much as in spinach)







A Farmers Market Peach Cobbler 
(for Swedish, scroll further down)


For the Crust


• 200 g or 1 cup Dates, pitted and soaked for 10 min.
• 300 g or 3 cups dry Walnuts (you can pre soak them and dry them in the dehydrator)
2 pinches of Himalayan salt
• 2 teaspoons Mesquite flour

Grind the Walnuts in a food processor with the salt and Mesquite, set aside in a bowl. Make a date paste of the Dates and then add the dry ingredients to the paste. Process until you have a dough. Press down the dough in a pie form (or three small ones as shown in the images), using your hands and a wet spoon to even the surface for a prettier finish. Put in the fridge to chill while making the Peach Smoothie!




Peach Smoothie Filling

• 120 g or 1 cup of dry Cashew nuts (you can pre soak them and dry them in the dehydrator)
• 400 g or 6-7 small Peaches
• 1 teaspoon of Lime juice
• 2 tablespoons of Virgin Coconut oil (hard but soft enough to scoop up with a spoon)
• 1 pinch of Himalayan salt
• 3 teaspoons Agave nectar, or the sweetener of you choice
• 1/4 teaspoon real Vanilla

Grind the Cashews into a fine flour, using a coffee grinder or a high powered food processor. Put aside in a bowl. Add the rest of the ingredients but the Coconut oil to the food processor and process until completely smooth and super creamy. Now add the Coconut oil and process for maximum 30 sek.
Pour over the pie crust, put in the fridge to chill, while you make the Pecan Cobbler Crumbs!

Pecan Cobbler Crumbs

• 100 g or 1 cup of dry Pecans (you can pre soak them and dry them in the dehydrator)
• 2 pinches of Himalayan salt
• 1 teaspoon of Agave nectar, or honey
• 1/4 teaspoon Cardamom
• 1/4 teaspoon Cinnamon

Pulse the Pecans shortly in a food processor or blender. You want crumbs, not a flour. Put the crumbs in a bowl and add the rest of the ingredients and stir by hand.

Sprinkle the crumbs over the filling, and cut slices of Peaches to put on top. Add some more of the crumbs over the Peach slices. Put in the fridge to chill for 30 min and EAT!

Smulpaj på Persika


Pajbotten


• 2 dl Dadlar, urkärnade och blötlagda i 10 min.
• 6 dl torra Valnötter (om du vill grodda dom, så se till att torka dom för det här receptet)
• 2 nypor Himalayasalt
• 2 tsk Mesquite mjöl

Gör ett mjöl av Valnötterna i en matberedare tillsammans med saltet och Mesquiten, häll mjölet i en skål. Gör en "dadelpasta" av Dadlarna i matberedaren. Tillsätt de torra ingredienserna till dadelpastan och mixa tills du har en deg. Tryck ner degen i en pajform, eller i tre små pajformar som på bilderna. Ställ i kylen medan du gör smoohtie fyllningen!

Smoothie Fyllning


• 2 dl torra Cashews (om du vill grodda dom, så se till att torka dom för det här receptet)
400 g Persika eller 6-7 st av den lilla sorten (inte den som är stor som en tennisboll)
1 tsk Lime juice
• 3 msk Virgin Cocosolja
• 1 nypa Himalaysalt
• 3 tsk Agave eller det sötningsmedel du föredrar
• 1 krm äkta Vanilja

Gör ett fint mjöl av Cashewnöttera i en elektrisk kaffekvarn eller en bra mixer/blender. Tillsätt resten av ingredienserna utom Cocosoljan och mixa tills du har en perfekt, krämig smoothie (kan ta 5 minuter). Tillsätt nu Cocosoljan och mixa i max 30 sek. Häll över pajskalen, ställ i kylen.


Pecan smulor

• 2 dl torra Pecannötter  (om du vill grodda dom, så se till att torka dom för det här receptet)
• 2 nypor Himalayasalt
• 1 tsk Agave
• 1 krm Kardemumma
• 1 krm Kanel

Pulsera Pecannötterna hastigt i en matberedare eller blender för att få smulor. Häll smulorna i en skål och tillsätt övriga ingredienser. Rör för hand. Sprinkla smulorna över pajfyllningen. Skär sen aprikoser i tunna, tunna skrivor att dekorera med. Sprinkla lite extra Pecansmulor på toppen!

Potassium & Health, plus a Soul-feeding weekend

Hi friends! 
I had an amazing weekend, visiting one of my favorite cities in Sweden (Norrköping) for the first time in almost a decade. I spend a couple of years there in my early twenties that had a huge impact on me. 


I met up with old friends I haven't spoken face to face with in such a long time. We walked the streets I used to walk and I could remember old thoughts, feelings, conversations, aha-moments that I got walking there for the first time. It was like tying two loose ends together. I felt like a whole new person when I got back home. ^^

I did a hair mineral analysis a few weeks ago, so now I'm eating extra of vitamin C, B, A, E, and minerals like zinc, magnesium, niacin, manganese, chromium and potassium.
These supplements are based upon my individual metabolic type and my unique mineral pattern. 
I'm sure I eat nutritious food and all, but I have had deficiency in hydrochloric acid (saltsyra) so I haven't been able to absob the nutrition. But one thing that struck my eye was one mineral - potassium (kalium). It plays an important role for people with anxiety and stress disorders. It is one of the most important minerals in the body, without it you just can't be healthy and feel great.

• How it works in your body: Potassium transmits electrical signals between cells and nerves. It has alkaline properties, so it is a very important mineral which helps to maintain a good PH level and water inside the body (it is an electrolyte). It is required for keeping heart, brain, kidney, muscle tissue and other important organs in good condition.

• Effects: It is considered as a perfect stress buster, and plays an important role for people suffering from anxiety and stress. It also assists in metabolic processes and extracting the energy out of nutrients, among a great number of other things.

• Where do I find potassium? Dried mangoes and apricots, peas, tomatoes, leafy greens, lima beans and potato skins, bananas, avocados, dates, kiwi, raisins, melons, citrus fruits, nuts (almonds) and chocolate. And if you eat animal protein; chicken, whole milk, fish, clams. 

So.. On the agenda for the other half of this week, I'm planning a new (cute) dessert recipe for you :) I'm also in the middle of planning my new bussines: RAW DESSERT CATERING! I already got my first order *thrilled*. I'm actually in the middle of a lot of things concerning Love raw and The Raw Dessert Kitchen, so I'm a busy bee right now. Stars & Stripe Tiramisu from the dessert eBook!

Long talks, long walks..

giving birth to new understandings, gosh I love you cuz you understand me. So many thing to talk about, never ending needs, a cup full of sharing, sowing beautiful seeds. 


The end of the rainbow, this constant state we're in, receiving each others most inner things. Unfolding treasures within. Revealing secret feelings, oh beloved one, you give me wings. 



I was having a lovely friend over yesterday and treated her with an old yummy favorite, a raw tiramisu I did for the dessert eBook. Remember this? :)








I remade it for the second edition of the eBook that is soon being published, and let her taste it. She loved it! :D I thought you get the recipe too, so here it is: 

Stars & Stripe Raw Tiramisu (in Swedish further down)

Chocolate Filling

• 3/4 cup Almonds
• 1/4 cup Macadamia nuts
• 2/3 cup Water
• 1 pinch Himalayan salt
• 1/4 teaspoon real Vanilla
• 2.5 tablespoons raw Cacao powder
• 2.5 tablespoons Agave nectar
• 2 tablespoons Coconut oil

In a food processor, grind the nuts into a flour and add the rest of the ingredients. Process until completely smooth (can require 5 minutes of processing). Pour about 1 cm of the filling in a pretty bowl and place in the freezer to harden a bit while you make the Cookie Crumbles. 


Cookie Crumbles

• 0.5 cup Pecans
• 2 pinches Himalayan salt
• 1/4 teaspoon real Vanilla
• Arrack essence to taste
(alternatively some cognac or coffee)

Pulse the ingredients in a mixer to create crumbles. Drop some Arrack, Cognac or Coffee over and then spread a layer of the Crumbles over the frozen Chocolate Filling from the freezer. Continue with the Vanilla Filling. 


Vanilla Filling

• 3/4 cup Cashews
• 1 pinch of Himalayan salt
• 1 teaspoon real Vanilla
• 0.5 cup Water
• 4 teaspoons light Agave
• 1 teaspoon Lucuma
• 0.5 teaspoon Lemon juice
• 2 tablespoons Coconut oil.

Grind the Cashews in a food processor or coffee grinder to make a nut flour. Add the rest of the ingredients and process until completely smooth. Pour about one centimeter of the Vanilla Filling over the Chocolate Filling and the Cookie Crumbles. Put in the freezer until hard and then continue to add layers. Put some raw Cacao in a tea ball and puff it on top of the Tiramisu. Thaw before eating.

Health benefits of Himalayan salt: 

• Helps the body to regulate water in and out of the cells. 

• Helps to create a good PH balance, particularly for the brain. 

• Good for keeping the blood sugar balanced, promotes bone strength.  







Stars & Stripe Raw Tiramisu

Chokladsås

• 1.5 dl Mandlar
• 0.5 dl Macadamianötter
• 1 nypa Himalayasalt
• 1/4 äkta Vanilj
• 1.5 dl Vatten
• 2.5 msk raw Kakaopulver
• 2.5 msk Agave nektar
• 2 msk Cocosolja

Gör ett mjöl av nötterna i en matberedare eller elektrisk kaffekvarn. Tillsätt resten av ingredienserna och mixa till en perfekt slät kräm (mixa i ca 5 minuter). Häll upp Chokladsåsen i en bunke och välj en fin serveringsskål där du häller 1 cm av Chokladsåsen och låter stelna i frysen. Fortsätt med Cookie Crumble-blandningen. 


Cookie Crumbles
• 1 dl Pecannötter
• 2 nypor Himalayasalt
• 1/4 tsk äkta Vanilj
• några droppar Arraks essens, 
Kaffe eller Cognac.

Mixa ingredienserna till smulor i en matberedare eller blender. Droppa över lite Arrak, Kaffe eller Cognac. Häll ett tunt lager över det frusna Chokladlagret och fortsätt med Vaniljsåsen. 


Vaniljsås

• 1.5 dl Cashewnötter
• 1 nypa Himalayasalt
• 1 tsk äkta Vanilj
• 1 dl Vatten
• 4 tsk ljus Agave
• 1 tsk Lucuma
• 0.5 tsk Citronsaft
• 2 msk Cocosolja

Gör ett mjöl av Cashewnötterna i en matberedare eller elektrisk kaffekvarn. Tillsätt resten av ingredienserna och mixa till en perfekt kräm (kräver ca 5 minuters mixande). Häll Vaniljsåsen i en bunke och häll 1 cm av såsen över det frysta Chokladlagret med Cookie Crumbles. Ställ i frysen och fortsätt varva med Cookie Crumbles och Chokladsås. Pudra sista lagret med raw Kakao i en tekula. Tina Tiramisun helt innan servering.
